Let’s see why a popular saying comes in handy when talking about the baking process and, specifically, what are the practical suggestions that we can share to get the bread we want, with constancy and predictability.

1. How to get the same quality of bread in all seasons

The challenge for every baker is to always offer the same good bread, regardless of the external weather conditions. Let’s find out how to always get the same dough, in all seasons!

A fundamental condition for the creation of an excellent bread is to keep the temperature of the dough under control, given primarily by the two basic ingredients: flour and water. The most effective means of rebalancing seasonal fluctuations is water, since it is an excellent thermal conductor, meaning it requires little energy to be cooled or heated, and represents an important share of the dough, on average around 40%!

A second important aspect concerns the bread production line, that is, the set of machines we rely on to automate and improve the production process of breads and bread products.

Each of these machines is able to bring important benefits and must be chosen carefully according to your needs and your budget. Where generally little attention is paid and we would like to focus here is the importance of the ingredients of the dough and in particular an ingredient, as precious as little considered: water!

We have already argued that water plays a fundamental role in obtaining the optimal temperature of the dough and in balancing external variations, due for example to seasonal changes.

Here we would like to underline how the creation of a correct dough, i.e. at the right temperature and with the correct hydration, is an essential condition to fully exploit the potential of all the machinery of the bread production line. A dough that is too hot will start the leavening process too soon, preventing the best mixer from working well, like a dough that is too or too little hydrated will not allow the best oven to obtain the desired type of baking.
